Stir Eggplant with Minced Pork

INGREDIENTS
2 eggplants
100-150g mince pork
1 1/2 tsp dark soy sauce, divided
2 1/2 tsp oyster sauce, divided
Salt and pepper to taste
2 clove garlics, minced
3 red chillies, finely sliced
3 tbsp water
scallions for garnish, optional

INSTRUCTIONS
  1. Cut the eggplant long like sticks. Minced garlics and red chilies.
  2. In hot pan spray some oil then toss garlic cook until fragrant.
  3. Put mince pork and use your spatula to break it apart.
  4. Pour 2 tsp oyster sauce and 1 tsp dark soy sauce, mix well. Keep cooking and make sure that the meat is cooked well.
  5. Then add eggplants to the pan. Combined everything together. Cover the pan for 3 mins to cook the eggplant until a bit soft.
  6. Remove the lid and add the remaining sauces and water. Keep cooking until eggplant soft and everything well combined. Add red chilies and give a good stir. Turn off the heat.
  7. Top with scallions! Serve the eggplant and meat over rice
