ZOSUI (Japanese Rice Soup)

 


Zosui is a comforting Japanese rice soup cooked in a savory dashi broth with vegetables, eggs, mushrooms, and you can add meat or seafood. It’s a nourishing meal that can be made with anything in your kitchen. A version of Japanese style congee but the rice still intake, it is usually cooked at home from leftover rice & vegetables.


INGREDIENTS


2 cups water

1 dashi packet


1 1/2 tsp soy sauce

A pinch salt and pepper to taste


slices beef, 50g


1 small carrot, slices

A few leaf cabbage, cut
2

2-3 small shiitake mushrooms, slices


2 bowls of rice

1 large egg


INSTRUCTIONS

  1. In a pot, bring dashi, water, soy sauce and salt to boil.

  2. Cut the beef into small bite-sized pieces and thinly slice the shiitake mushroom and carrot (or any vegetables you like).

  3. Then add in the beef, mushrooms, veggies and cook until they are soft.

  4. Add in the cooked rice and stir thoroughly to make sure there are no lumps of rice. Allow it to boil, and then turn heat down to medium small to simmer.

  5. Add the beaten egg and spread it evenly on the surface of the pot and then place lid on to cook for another 30 seconds.

  6. Remove from heat and top with nori (optional)
