One Pot Chicken Pumpkin Pasta
One-pot pumpkin chicken pasta, a great way to use a couple of ingredients in the same pot to have a delicious meal, perfect for lunch or dinner. This recipe came up because Halloween need more pumpkin meal. It is a great meal with amazing flavor and it has everything start from carbs, protein, and many veggies if you like too.
INGREDIENTS
250g spagethi or fettuccine
1 tsp oil
salt and black pepper to taste
250g chicken breast fillet, thinly sliced
75g oyster mushrooms, sliced
2 garlic cloves, minced
1/2 large onion, slices
1/4 cup chicken stock
4-5 tbsp pumpkin puree, more of you like creamier
1 medium bell pepper, slices
A couple of baby cor, slices
INSTRUCTIONS
1. Microwave the whole pumpkin, stab the surface with fork or knife to released the pressure. Cook on HIGH until tender, about 5-10 minutes (depend on size, mine is really small one). Cool it down before then scrape out the tender flesh with a spoon.
2. Cook pasta in a large saucepan of boiling, salted water following packet directions, until tender. Drain and set aside.
3. Add oil in the same pan then brown the chicken for around 2 minutes each side. Season with salt and black pepper and set aside.
4. Add oil athe saute the onions first then the garlic until soft and fragrant. Place the pumpkin puree and chicken stock. Season with the more salt, black pepper, sweet paprika, and oregano. Let it cook for 5-10 minutes, covered.
5. Add mushrooms first cook for a minute or 2. Then add all veggies cook until soft.
6. Return chicken and juices to pan and mix them well. Reduce heat to low. Then add pasta stir to coat.
7. Served on a plate, optional to sprinkle with cheese or any herbs you like.
