Simple Potato Pancake or Gamjajeon
Simple potato pancake called Gamjajeon in Korean. I made simpler version of it, just grate the potatoes, then drain and then potato starch directly. When you feel like a snack, you can whip this up in minutes. The inside is chewy and soft, and the outside is a little crispy and crunchy like a french fry.
INGREDIENTS
1 large potato (8 ounces), peeled and grated
1/4 tsp salt or to taste
A bit garlic powder
1/4 cup potato starch
oil to spray
For dipping sauce (optional)
1 tbsp soy sauce
1 tsp freshly squeezed lime juice
1 green onion, chopped
INSTRUCTIONS
1. Put the grated potato in a bowl then add salt, garlic powder and potato starch and mix it together.
2. Heat nonstick pan over low-medium heat. Spray with some oil to coat it evenly.
3. Add the potato mixture and spread it thinly on the pan.
4. Cook a few minutes until the bottom of the pancake turns crispy and a light golden brown. Cover with the lid will make them cook faster.
5. Turn it over with a spatula or flip it. Let the pancake cook until the bottom of the pancake turns golden brown.
6. Keep turning it over and cooking until both sides are crispy and light golden brown around 8 to 10 minutes.
7. Sprinkle green onion on top then transfer it to a plate and serve with the sauce.
