Chicken Sweet Corn Soup


Chicken and sweet corn soup is our comfort food. This recipe is easy you can make dinner less than 15 mins. #mom_chickencornsoup

INGREDIENTS
2 cups chicken stock or vegetable stock, divided
1 cups diced chicken breasts
1/8 teaspoon garlic powder
1/2 green onion, divided
1/2 medium carrot, cut diagonal
1/2 medium fresh corn
1/2 tsp cornstarch
1 large egg, whisked
sea salt and pepper to taste

INSTRUCTIONS
1. In a pan, stir together stock, chicken, garlic powder, green onions, carrots and corn until combined.
2. Heat over medium heat until the soup reaches a simmer. Then reduce heat to medium-low, cover and simmer for about 10 minutes, or until the carrots have softened.
3. In a separate bowl, whisk together the remaining 3 tbsp stock and cornstarch until combined.
4. Stir the mixture into the soup and cook for 1 minute, or until the soup has thickened.
5. Using a spoon, begin to swirl the soup slowly in a continuous motion. Then while you are still swirling the soup, drizzle the egg into the soup in a steady stream. The hot broth will instantly cook the egg.
6. Then taste the soup, and season with salt and pepper as needed.
7. Serve warm, sprinkled with more green onions.
