Halloween Stuffed Peppers
Halloween is just a round the corner why don't carve a scary face into a few peppers (let the your little one help!) then fill them up with this DELICIOUS stuffing.
INGREDIENTS
2 large bell peppers, different colors
A spray of olive oil
1 garlic cloves, minced
200g ground chicken
1 tsp sweet paprika
1/2 tsp herbs of your choice
salt and freshly ground black pepper, to taste
1/2 cups cooked brown rice
2-3 oyster mushroom, minced
Any choice of fresh or frozen veggies
INSTRUCTIONS
1. Carefully slice the tops off of the peppers and remove the ribs and seeds inside.
2. Carve the face on the side of each bell pepper. Don’t make it too big or all the stuffing will fall out.
3. Then put the carved bell peppers into a baking dish, lightly spray them with cooking oil and sprinkle with salt and pepper.
4. Bake for 8-12 minutes in 180C/350F, or until the peppers just begin to soften.
5. Meanwhile, prepare the stuffing heat oil in pan over medium heat. Add in onion, garlic and then stir in the meat and cook until browned.
6. Sprinkle in all seasonings, then add in your mushroom and veggies cook until soften.
7. Put the rice in and stir well to combine then taste test and season with more salt and pepper if needed.
8. Carefully spoon stuffing into each pepper and served warm!
