Mango Salad
Mangoes are one of the most widely consumed fruits in the world. Not only they are delicious, but also nutritious. As with most foods, however, moderation is key. Sweet fruits like mangoes can have a lot of sugar. But fruit sugar is different from processed sugar because it’s balanced out by fiber and a host of nutrients for the body. If you’re craving something sugary, grab some mango instead. This salad combination is so good!
INGREDIENTS
50 gr shrimp, peeled
1/2 lemon, juiced (divided)
black pepper to taste
1 mango, cut diced
1/4 tsp sugar
basil leaves (or any herbs, optional)
cayenne powder or chili flakes (optional)
INSTRUCTIONS 1. In a bowl place shrimp, add lemon juice and black pepper. Coated them well. 2. Place the shrimp in air fryer and cook until pink and firm for around 7-8 minutes in 200C/400F. 3. Meanwhile prepare the mango salad, whisk together lemon juice and sugar. 4. The mango has a flat-ish oblong pit in the center of it. Holding the mango with one hand and with a sharp knife in your other hand, cut from the top of the mango, down one side of the pit. 5. Take a mango half and use a knife to make lengthwise and crosswise cuts in it, but try not to cut through the skin. Use spoon to scoop out the flesh to a bowl. 6. Don't throw away the mango skin. We can use it as plate for the salad. 7. Then add cooked shrimp to mango salad, mix them together. 8. Served the salad on top of mango skin. Enjoy!
