Instant Pot Chicken Turmeric Rice
INGREDIENTS
4 chicken breast, approx 1 1/2 pounds
A dash of salt (non iodized)
1 1/2 cups rice, uncooked
1 cups chicken stock (or water), using the same cup as rice
3 cloves garlic, minced
1/2 medium onion, minced
1 tbsp turmeric powder
1 tsp garlic powder
6-7 oyster mushroom
Any veggies you like (I use baby corn and bell peppers)
INSTRUCTIONS
1. Wash and drain rice. Put in instant pot.
2. Add chicken stock and all spices in your instant piot.
3. Arrange the chicken breast , mushroom, baby corn and bell pepper over the rice. Turn on the instant pot and let it cook for 15 minutes.
4. When instant pot shuts off, remove the lid, cut diced chicken and veggies. Mix it all together.
5. Serve on plate and garnish with scallions.
