20 minutes Spring Shrimp Spaghetti

INGREDIENTS
250g (9 oz) spaghetti
1 tbsp vegetable oil
250g (9 oz) shrimp, peeled
3 garlic cloves, finely chopped
1/2 tsp chilli flakes (optional)
3 tbsp oyster sauce
2 tbsp soy sauce
Spring Onion Sauce:
2 stalks finely sliced spring onion (scallions)
1 tsp salt
1 tsp vegetable oil
1/2 tsp sesame oil
INSTRUCTIONS
1. Cook the spaghetti in a large pot of boiling salted water until just al dente. Set aside for later.
2. Place the vegetable oil and sesame oil in the pan over medium-high heat for 2-3 minutes until hot.
3. To make the sauce, cut the spring onion with scissors.
4. Now pour half the hot oil over the spring onion mixture. Then add salt and stir to combine.
5. Add shrimp to the pan and cook with the remaining oil. Cook for 5-7 minutes or until the shrimp turns pink and firm.
6. Pour over the soy sauce and oyster sauce. Simmer for a couple of minutes.
7. Drain the pasta and add into the pan with the shrimp. Flip the pasta in the sauce for 2-3 minutes until all combined.
8. Spoon over the spring onion sauce and mix again. Then add chili flakes (if using)
9. Served on a plate!
