The Best & Easy Scallion Pancake aka 蔥油餅



The best and easy scallion pancake recipe. Just perfect crispiness for breakfast in this cloudy day!

INGREDIENTS
  • 1 1/4 cups all-purpose flour (150 g), for dusting and rolling
  • 1/2 tsp salt (non iodized for low iodine diet)
  • 1/2 cup water (120 ml)
  • 2-3 stalks scallion or green onion, green parts only, minced
  • 1-2 tbsp sesame oil, for brushing and more for frying
INSTRUCTIONS
  1. Heat the water until it boiling hot.
  2. Place flour into a bowl and then add salt and combine well.
  3. Slowly add the hot water to the flour and knead the dough until it no longer sticky, about 10-15 minutes. If the dough is too dry, add 1 to 1 1/2 tbsp of water to the dough.
  4. Cover the dough with kitchen towel and let it rest for 20 minutes.
  5. On a flat and floured surface, divide the dough into 4 small doughs. Roll one dough at a time using a rolling pin.
  6. Brush the surface of the dough with sesame oil. Add the scallions on top of the dough.
  7. Roll the dough into a cylinder and coil it up like a snail. Roll the snail-shape dough until flat and dust the flour as neeeded. Repeat the steps above for the rest of the dough balls.
  8. Spray some oil into a fry pan over medium high heat. Place a piece of the pancake into the pan .
  9. Fry each side of the pancake to a light golden brown, about 1-2 minutes. Flip the pancake over and fry the other side.
  10. Brush more with sesame oil, repeat the same for the remaining pancakes and serve immediately.
