How to Make Chicken Congee (Rice Porridge) in an Instant Pot


Instant Pot Congee is a warm and comforting food for our family, it can be made with endless possibilities for fun toppings. So easy put everything in instant pot and dinner ready in less than 25 minutes.
INGREDIENTS
  • 1 cup uncooked rice
  • 2 cloves garlic
  • 5 oyster mushrooms
  • 350-400g chicken breast
  • 6-7 cups water (same cup with the rice)
  • 1/2 tbsp non-iodized salt and pepper (or to taste)
  • A bit of garlic powder (or to taste)
  • Any veggies you like (baby corn, corn, carrot, celery and bamboo shoot)
  • Chopped green onions for topping (optional)
INSTRUCTIONS
  1. Crush the cloves of garlic. Place the uncooked rice in the bottom of the Instant Pot and add the crushed garlic and whole chicken breast on top. Finally, add seven cups of water.
  2. Close and lock the lid of the Instant Pot. Turn the steam release valve to the "sealing" position for 15 minutes.
  3. Slice the mushrooms and veggies while cooking the congee
  4. After 15 minutes, open the pot will so it begin to drop in pressure.
  5. Using tongs, carefully remove the chicken and cut them on a clean cutting board. Return the cutted meat to the pot.
  6. Put in mushroom and veggies into the pot. Close the lid and cook again for 3 minutes. When the float valve falls back to the down position, open the steam valve, and then open the lid
  7. Stir and taste the porridge, and add salt, pepper and garlic powder for taste.
  8. Pour the congee into a bowl and sprinkle the sliced green onions on top. Enjoy your meal!
