Pile Up Vegan Banana Pancake
Who doesn't love pancakes, right? Want the plain one or the chocolate one?
INGREDIENTS 1 ripe mashed banana 1/8 tsp baking soda 1 cup oat milk 1 cup flour (Sub oat flour OR Gluten Free flour) Oil for Frying 1 tbsp honey (sub with maple syrup for under 1 year) 2 tbsp cocoa powder INSTRUCTIONS 1. In a bowl, mash the ripe banana until smooth. 2. Mix with oat milk then slowly add half of the flour and mix until combined. Add baking soda, honey and the rest of the flour. Batter will be slightly lumpy. 3. Heat a skillet on the stove to medium and once it’s hot, add a little oil and spoon in around 2 tablespoons of batter per pancake into the mold. Cook the first 2 plain pancakes. 4. Cook until bubbles form and then flip the pancakes. Then start adding 1/4 tsp cocoa powder to the batter and mix them each times. The batter will get more darker and darker to achieve ombre effect. 5. Served it with fruits and more maple syrup
