15 Minutes Chicken Mushroom Risotto
15 Minutes CHICKEN MUSHROOM RISOTTO. It’s not a traditional risotto but its quick yet delicious and creamy too!! #mom_chickenrisottorecipe
INGREDIENTS (for 2 servings)
1 tsp oil
1 cloves garlic minced
1 cup diced chicken breast
1/2 cup mushrooms (any type you like)
1 1/2 cups cooked cool rice
1 -1 1/2 cup chicken stock
amount of parmesan cheese grated
basil leaves
INSTRUCTIONS
1. Heat the oil in a large frying pan or wok, and add garlic, chicken and mushrooms. Cook over a medium heat for 5 minutes, until soft.
2. Add the rice and chicken stock, and turn the heat up to medium-high. Cook for a few more minutes until the liquid has been absorbed. If you can add more chicken stock 2 tsbp each time if you feel the rice still too dry.
3. Add cheese and keep stirring a few seconds until cheese melted. Remove from the heat, and add basil leaves.
