Baked Croquettes

This recipe requires no deep frying, making it healthier and easy just toast it into the oven.

INGREDIENTS
450 g potatoes, about 2
1 /2 onion, diced
1 tbsp vegetable oil (divided)
250 g ground beef
freshly ground black pepper
1/8 tsp kosher/sea salt (use half for table salt) (for beef)
1 cup panko breadcrumbs
1/4 tsp kosher/sea salt (use half for table salt) (for potatoes)
1/2 tbsp unsalted butter
1 large eggs
1/4 cup all-purpose flour (30 g)

INSTRUCTIONS
1. Peel and cut potatoes into a large pot. Add water until it covers the potatoes. Bring it to a boil and cook the potatoes this will take about 20 minutes.
2. In a large fry pan, heat oil on medium high heat and sauté the onion until soft. Add meat and cook until no longer pink.
3. Season with black pepper and salt. Remove from the heat and set aside.
4. Combine the panko and 1 tbsp oil then toast over medium heat until golden brown. Transfer the panko into a bowl or and allow to cool.
5. When potatoes is cooked, mash it and season with freshly ground black pepper, 1/4 tsp salt, and 1/2 tbsp butter.
6. Add meat mixture into the mashed potatoes and combine well. Some onions and meat yield more juice after cooking. In that case, avoid adding any juice into the potatoes. Wet potatoes will make it harder to shape the croquettes.
7. While the mixture is still warm, but not hot, make thick oval patties, about ½ inch thick. Let the patties rest in the refrigerator for 15-30 minutes. TIP: Resting and cooling down the patties prevents the korokke from exploding
8. Preheat the oven to 204C/400F
9. Coat the patties with flour and pat off any excess flour. Then coat the patties with eggs and finally panko.
10. Bake at 400F (204C) for 10 minutes. Serve with Tonkatsu sauce.
